Easy veggies – we need to have a few recipes in our mom-arsenal! I have found the handful of veggies that my kids will eat and I make them A LOT! My kids like seasoning – probably my fault for eating the way I did while pregnant. These carrots will please both little people and the big people in your house!
1 lb carrots, peeled and sliced at an angle
2 tbsp olive oil
big pinch of salt
small pinch of pepper
onion powder
garlic powder
cumin
Preheat oven to 350 degrees.
Peel carrots, cut off ends, slice lengthwise.
Slice these longer pieces at an angle to make evenly sized pieces.
Toss carrots, olive oil, and spices in a large mixing bowl until carrots are coated. I do not measure the spices – simply add more of what you like and less of what you don’t!
Spread evenly on a baking sheet and bake for 15-20 min or until soft, stirring once halfway through.
I serve these with EVERYTHING! Chicken, steak, buttered noodles, pork loin, and even as a random side for lunch.
