Raleigh’s Chicken

Raleigh eats this simple chicken breast every time it is served. Remy likes it too! When asked what he likes best that mommy cooks, he always says “Chicken!” I hope your kiddos like it too!

2 Chicken Breasts, butterfly cut and separate
2 tbsp olive oil
salt and pepper to taste
garlic powder
onion powder

Place chicken on cutting board, cover with plastic wrap, and pound until thin (1/4 inch)

Remove plastic wrap, salt and pepper both sides generously

Add garlic powder and onion powder to both sides per your kiddo’s taste. I even add a bit of cumin sometimes!

Heat pan over medium high heat Add olive oil to the pan once the pan is HOT

Add chicken breast and cook for about 2-3 minutes on the first side until chicken starts to turn brown, flip and cook other side until slightly brown as well

Transfer to a plate as you will probably have to cook them in batches

Slice the chicken! I serve with ANY and ALL things! —> Salad, roasted veggies, carrots & ranch, over rice, with buttered noodles. I make an entire batch of this chicken each week and pull it out when I know I need him to eat a good meal!
