Another simple side dish or appetizer! Everyone likes it in the summer. But if you grow basil inside during the winter, you can have it all year round.
In the spring and summer, growing basil is super easy! Here is my plant from last year. I barely had to touch it as it’s very hardy. Caprese all day, every day!
2 medium ripe tomatoes
1 ball of fresh mozzarella
4-5 large basil leaves
1/4 cup of balsamic vinegar reduction (you can either make your own or buy THIS)
Slice tomatoes thin and lay on a cutting board or plate
Also, slice the mozzarella ball (or buy it sliced) in evenly sized portions and place on top of each piece of tomato
Wash, dry, and roll the basil leaves like a cigar and slice into ribbons, cut ribbons in half or whatever size you’d like
Drizzle balsamic vinegar reduction over the tomatoes and mozzarella in a pretty pattern!
Sprinkle the fresh basil over top
Serve with red wine, pasta, and some crunch bread!
