Who doesn’t love a runny egg? Well, maybe it’s just me. But this is one of my very easy and random creations that we have in our house now probably once a week for dinner! I took the picture for this recipe 2 years ago. I have since elevated it even more with a great set of spices! Check out the super easy recipe below!
makes 2 bowls:
2 cups jasmine rice, cooked (this gives a lot of rice)
8 strips of bacon, crispy and chopped
3 green onions, diced
4 sunny side up eggs
salt and pepper
garlic powder
onion powder
sesame seeds
Cook rice according to directions
Cook bacon until crispy and remove from pan. Leave the bacon grease in the pan for cooking eggs.
Dice green onion
Crack and slowly add eggs to hot greasy pan and cook until the whites are no longer jiggly or raw – I love waiting until the edges of the eggs get brown and crunchy.
While eggs are cooking, sprinkle salt, pepper, garlic powder, onion powder, and sesame seeds on to each egg
Add rice to the bottom of the bowl and then bacon, green onion, runny eggs and extra sesame seeds!
I cut the eggs up into small bite sized pieces and mix the runny egg yolks into the rice. YUM!
