Big R LOVES him some pizza. I do too! But, unfortunately I am lactose intolerant and cannot enjoy it as often as I would like. I found a few products that are super tasty and now we can make yummy pizza at home! Most stores these days carry a great variety of both gluten free and dairy free ingredients. The more and more processed our products in the US become, the more these types of alternatives are needed. Are they perfect and just as the originals? No. But, do they allow you to enjoy some meals once in a while?! YES.
Gluten free dough – either fresh, frozen, or packaged
Pizza sauce
Dairy free cheese – I use the Go Veggie or Daiya brand
Pepperoni or other favorite topping
I bake the dough according to instructions with a little olive oil on top. Usually, there is a short initial baking time before you put on the toppings to solidify the dough a bit. You then add toppings and bake once more to finish.
Add the pizza sauce, white sauce, pesto sauce, etc to the top of the dough.
Sprinkle the entire pizza with the dairy free cheese and add any other toppings you would like.
Note that the dairy free cheese will not get ooey gooey like a regular melted cheese. It will, however, be warmed up and still taste great! Dairy free cheese is usually made of potato or rice starch – the taste ALONE will not be very cheesy. But, when added to the pizza, along with toppings, you won’t be able to tell the difference!
I will tell you that this cheese does not last or hold up for leftovers. It will have an odd, watered down texture the next day.
