Pretzel Crusted Chicken Nuggets

What kid doesn’t like chicken nuggets? R&R love them but I am not a huge fan of buying them frozen. These pretzel covered ones are fresh, delicious and super playful! Pair them with some mustard or ketchup (my fave is mustard and mayo together) and you are all set! 1 cup flour
1 tsp salt
1 tsp pepper
2 eggs, whisked
2 cups of crushed pretzels (about 3 big handfuls of full pretzels – I use the sticks or the flat pretzel chips)
3 chicken breasts, cubed into 1″ nugget sized pieces

Preheat the oven to 400 degrees. Cover a large baking sheet with aluminum foil.

Mix flour, salt, and pepper together in a shallow bowl. Whisk the 2 eggs together in another shallow bowl.

Put the whole pretzels in a large freezer bag and crush them with the end of a rolling pin. Be careful not to make a powder out of the pretzels but crush them just enough to ensure there is still crunch on the nuggets. Add the crushed pretzels to another shallow bowl.

Set up your assembly line – flour, eggs, pretzels. Cover each piece of chicken evenly in the flour, dredge in the eggs, and then roll in the crushed pretzels. Place nuggets on the baking sheet.

Bake the nuggets for 20 minutes or until chicken is cooked through. Serve with some sweet potato fries and your favorite sauce!
