Guacamole: Simple, A Little Extra & Fancy

Avocados are by far one of my top 5 favorite foods. When you can mush those up and put them on chips and tacos or slice them up for salads, or eggs – SOLD! The possibilities are really endless. I have come up with 3 easy guacamole recipes. Each has more ingredients than the last and they all build on each other. You can make a great guacamole with the things you have in your fridge!

Simple:
1 Avocado, peeled and mashed
Pinch of Salt
1 tsp Lime Juice

A little extra:
SIMPLE guac +
1 Roma Tomato, diced
1/4 White Onion, diced
Pinch of Cilantro, chopped

Fancy:
A LITTLE EXTRA guac +
1 Small JalapeΓ±o, diced
Large Pinch of Cojita Cheese, crumbled
Drizzle of Sour Cream

Let your kids help with this recipe! Big R loves to scoop out the avocado and mush it all up in a bowl. Little R loves to eat diced fresh avocado and making a big green mess. Kids of all ages can be involved, ha!
