I am a huge fan of takeout – especially when a week day turns into a hot mess day – when I don’t want to cook! I almost always default to Asian takeout – Chinese, Japanese, or Thai food. You can still make healthy choices and everyone will eat it! To save money, I sometimes try my hand at my favorite dishes at home. Red curry, ramen, orange chicken, and this Thai lettuce wrap recipe!

Ingredients

  • 1 head of bibb lettuce

  • 2 lb lean ground turkey, browned (you could use tofu, chicken, or beef!)

  • 3 tbsp garlic, minced

  • 2 tbsp ground ginger

  • 4 tbsp green onion, minced

  • 8 can can water chestnuts, diced

  • Sauce
  • 1 tbsp rice vinegar

  • 5 tbsp thai sweet red chili sauce

  • 3 tbsp coconut aminos

  • sriracha to taste

Directions

  • Brown ground turkey in a pan on medium high heat. Drain, if needed, and stir in minced garlic and ground ginger.
  • Mix the ground beef with the green onion and water chestnuts in a large bowl.
  • In a smaller bowl, stir together your sauce ingredients. You can add sriracha at this time if you like spicy lettuce wraps or leave it to the end so everyone gets to choose!
  • Add the sauce to the ground turkey mixture.
  • Serve on the bibb lettuce! I always use two pieces of bibb lettuce as my β€œwrap” so that the turkey mixture doesn’t fall out and lettuce doesn’t break.

Notes

  • You can add rice to the wraps or serve it on the side to make the meal more substantial. We like them all by themselves and it’s very filling!
  • The turkey mixture is on the sweeter side if sriracha is not added and is great for the kiddos!
