I am ALWAYS on the lookout for easy weeknight meals that everyone will eat. This fajita recipe is one I have adapted over the years to ensure that it’s yummy outcome is super simple!

Ingredients

  • 2 lbs boneless, skinless chicken breasts, cut into long strips

  • 1 red bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1 medium onion, sliced

  • 1 tbsp salt

  • 1 tbsp pepper

  • 1/2 tbsp cumin

  • 1/2 tbsp chili powder

  • 1 tbsp garlic powder

  • 1/2 tbsp onion powder

  • 1/2 tbsp sugar

Directions

  • Mix together the fajita seasoning spices in a small bowl. Preheat the oven to 400 degrees.
  • In a large bowl, toss the peppers and onions together with a tablespoon of olive oil. Dump veggies in a 9×13 baking dish. Add the chicken slices to the dish as well.
  • Sprinkle the meat and veggies with the fajita seasonings and toss together! I am a fan of adding lots of seasonings to veggies and meat so you definitely taste the flavor after cooking.
  • Bake for 30-40 minutes, tossing the meat and veggies halfway through cooking.
  • When done, load some of the mix into your favorite tortilla! Add any of your favorite fajita toppings. I usually add lettuce, tomato, sour cream, fresh avocado slices, and cilantro!

Notes

  • Make sure to find spices with the gluten free warning if this is something you need to avoid!
