There are some days where soup is the perfect way to end your day. It is warm, comforting, and filling. This chicken and rice soup is also super easy to make. I usually have all of the necessary ingredients on hand at any given moment and can whip it up on a busy, rainy evening.

This “soup” is not super brothy or watery. It is hearty and full of flavor! Enjoy!

Rainy Day Chicken and Rice Soup

Ingredients

  • 2 tbsp avocado oil or olive oil

  • 1 medium onion, chopped

  • 2 medium carrots, chopped

  • 4 cloves garlic, minced

  • 10 cups chicken broth

  • 1 1/2 cups jasmine rice, uncooked

  • 2 cups rotisserie chicken, chopped

  • 1 tbsp kosher salt

  • 2 tsp cracked black pepper

  • 2 tbsp herbs de provence

Directions

  • Using a dutch oven, or another pot with lid, heat avocado oil on medium high.
  • Add onions and sautΓ© until soft. Add carrots and continue to soften for about 3 minutes. Then add your minced garlic.
  • Toss in your salt, pepper, and herbs de provence. Stir and let the flavors cook together for a bit.
  • Turn the heat down to low and add in your raw jasmine rice, stir to combine.
  • Add in your chopped cooked chicken and chicken broth. Give it a good stir!
  • Cover and let simmer for 30 minutes. I like to stir it every 8-10 minutes or so as to not let the rice stick to the bottom of the pot.
  • Add additional salt and pepper and herbs to taste. Enjoy!

Notes

  • You can also use RAW chicken breast or thigh in this recipe and allow for the same amount of cooking time. Simply add your raw chicken into the pot when you add the broth. You will then pull the chicken breast or thigh at the end, chop it up, and add back in!
