Okra! One of my faves! Many people complain they are slimy or not very tasty. Unless you fry them...

🧐🧐🧐🧐

Time to fix that!
Slice them in half, lengthwise.
Avocado oil in the pan on medium high heat.
Season with salt, pepper and paprika.
Let those suckers SIT. I like to get them dark brown on one side before stirring. It prevents the "slime" from going all over the place.

Flip, stir, whatever. Brown on all sides. You can even let them get darker than this! Get a good dark char! 🔥🔥🔥

Crispy, seasoned well, and super good for you! I paired them with chicken thighs and baked potatoes tonight.

Cooking class Sunday! I had a great time with some neighbor grandkiddos today! We made our own cinnamon sugar "chips" with fruit salsa, had a knife skills lesson, rolled up some puffy veggie pizza and created monster cookie balls!

Southwest Chicken Soup! I had about 541 veggies to use up before our next farm delivery shows up tomorrow. What better way than to roast them all together, blitz, add chicken, and enjoy?!

🐔🧄🥕🧅🫑🍅🐔🧄🥕🧅🫑🍅

Preheat oven to 400 degrees.

Roughly chop the following veggies:

5 green poblano chilies
2 white onions
3 large carrots
2.5 cups grape tomatoes
1 stalk of celery
1 entire head of garlic

Toss in:

Avocado oil
Cumin
Paprika
S+P

Roast for 45 minutes or until soft.

Using an immersion blender, puree, along with 5 cups chicken broth.

Add in 2.5 cups cooked shredded chicken.

Season again with salt and pepper to taste. Top with cilantro and avocado slices!

Slow roasted sprouts and carrots with chopped almonds! I am in LOVE with roasting all the veggies!

🥕🌱🥕🌱🥕🌱🥕🌱🥕🌱🥕🌱

Preheat oven to 400 degrees.
Half your sprouts and slice up a couple carrots.
Roughly chop about 1/4 cup of almonds.
Toss it all with about 1tbsp each olive oil, balsamic vinegar and honey.
Salt and pepper to taste.

Roast for about 20 minutes, stir and let them go another 10 minutes.
To prevent them from burning, I then reduced the heat to 350 degrees.
Let them roast again for about 15 minutes.

Drizzle with more honey. Toss. Finish with large flaky salt.
